Herbed Cottage Cheese and Asparagus Salad
Ingredients
3/4 cup cottage
cheese [3p]
1 cup cooked asparagus, cut into one-inch pieces [1/2C]
1 peach, sliced [1C]
1/3 cup Mandarin orange sections [1C]
1/2 cup strawberries [1/2C]
2 cups Romaine lettuce
1 teaspoon olive oil [3F]
3/4 teaspoon fresh basil finely chopped
dash each dried oregano and parsley
salt and pepper to taste
Preparation
Method
Combine cottage
cheese, asparagus, oil, oregano, basil, and black pepper. In
another bowl, combine peaches, orange sections, and strawberries
to form a fruit salad. Place the herbed cottage cheese on a bed
of lettuce, place the fruit salad around the cottage cheese and
sprinkle with parsley. Add salt to taste.
