Zone Diet
Recipe : Chicken Florentine
Ingredients for
Chicken Florentine
3 oz. chicken
breast cutlets [3P]
1 teaspoon olive oil [3F]
2 cups sliced fresh mushrooms [1/2C]
1/2 cup chopped onions [1/2C]
1 cup frozen chopped spinach
1/4 teaspoon ground nutmeg
Freshly ground pepper
1 tablespoon grated parmesan cheese
1 Apple [2C]
Preparation
Method for Chicken Florentine
Cook spinach
according to package directions. Drain well. Put
drained spinach between paper towels and remove extra moisture
by pressing with spatula. Place chicken cutlets and onion
in a medium sized saucepan. Add enough water to cover and cook
covered over medium low heat until just white throughout, about
15 minutes for thin cutlets. In a non-stick pan, sauté
mushrooms in olive oil until tender, about five minutes.
Put spinach on the bottom of a broil safe baking dish. Sprinkle
with nutmeg and pepper. Arrange chicken in a single layer
over spinach. Top with mushrooms. Sprinkle with cheese. Broil
for one or two minutes until cheese melts.
