Barbecued Chicken Salad
Ingredients
3 oz. skinless
chicken breast [3P]
Onion slices
Lemon slices
1-2 teaspoons barbecue sauce
1 spinach salad **(See Below) [1C]
1 tablespoon olive oil and vinegar dressing [3F]
1 peach [1C]
2 cup cooked asparagus [1C]
Preparation
Method
Preheat oven to
450 degrees. Put chicken in baking dish and cover with thin
slices of onion and lemon. Bake 15 minutes. Reduce heat to 350
degrees. Baste lightly with barbecue sauce and cook for 10 to 15
minutes more or until done. Slice the chicken breast.
In a plate,
arrange the vegetables. Then, arrange the chicken slices
on the bed of vegetables.
