Zone Diet
Recipe : Baked Fish and Vegetables
Ingredients for
Baked Fish and Vegetables
1 teaspoon olive
oil [3F]
4 1/2 oz. Flounder [3P]
Onions, sliced
2 cup yellow squash, sliced [1C]
2 cup zucchini, sliced [1C]
Lemon juice
Chopped herbs of your choice, such as thyme and dill
1 plum [1C]
Preparation
Method
for Baked Fish and Vegetables
Preheat oven to
400 degrees. Coat bottom of baking dish with oil. Spread half
the vegetables in the dish. Top with fish fillets. Put the rest
of the vegetables on top. Sprinkle lemon juice and herbs over
the mixture plus a couple of grinds of pepper, if desired. Cover
with foil and bake about 45 minutes or until fish is done and
vegetables are tender. Serve with lemon wedges.
